Gnocchi

This is Nona's classic Italian Gnocchi recipe. There are two different options for topping it; Tomato sauce or homemade Parmesan Sauce. The instructions for making the Parmesan Sauce are also included here.
Be warned, this recipe tends to take a couple of hours to make!

Ingredients
- Gnocchi:
- 2 qt. Cooked Potatoes (diced) (cook with salt)
- 2 1/2 cup Flour
- 2 1/2 cup Parmesan Cheese
- 1/2 cup Margarine
- 7 Eggs
- Garlic Parmesan Sauce (optional):
- 1/2 cup Butter
- 1/2 cup Parmesan Cheese
- 1/2 tsp. Garlic Salt
- 1 tsp. Parsley
- Tomato Sauce (optional)

Instructions
- Mash potatoes, then add all remaining Gnocchi ingredients and mix.
- Roll dough out on floured table into thin 1" rope, and slice into about 3/4" slices.
- Cook pieces in salted water, remove as they float to the top.
- Toss gently with tomato sauce or Parmesan Sauce (instructions below)
- Serve and enjoy!

- Melt butter
- Add all remaining ingredients
